Menudo from Asia

One must have heard of the word 'menudo' in the 80's. For many, it's more of a rock band; a group of young men from Mexico who bombarded the different continents of their music. But in the Philippines, Menudo is a well known food that people in the Philippines love to eat. it's a must on the table for festivities, wedding and other special occassions. This meal is also a symbol of the country's history; having been a colony of Spain for more 300 years.
There is also a menudo recipe known from Mexico but I guess the Philippines version is the best!

How to do:

Menudo recipe: the Asian way!

Filipino Menudo Recipe Ingredients

2 cups pork loin, cubed
1 cup pork liver, diced
1/2 cup potatoes, diced
1/4 cup chickpeas (garbanzo beans)
1/2 cup green and red bell peppers, diced
2 tbsp lard
1/2 tsp garlic, minced
1/2 white onions, chopped
1/2 cup red tomatoes, chopped
1/2 cup tomato sauce
salt, pepper and paprika to taste

Philippine Recipe: MENUDO

Ingredients :

1 kilo pork, cut into cubes
1 cup pork liver, cut into cubes
2 tablespoon oil
1 tablespoon minced garlic
1 pc onion, finely chopped
1 200g tomato sauce
1 pc laurel leaf
1 cup potatoe cut into cubes and fried
1 cup water
1 cup carrots
3 pcs. Hotdogs, chopped
¼ cup green peas
Salt and pepper to taste

How to do :
1. Sautee garlic, onion and pork. Let it simmer until the meat is tender enough
2. Add laurel leaf and tomato sauce and carrots. Simmer it for another 5 minutes
3. Add your potatoes, pork liver, hotdog pieces and 1 cup of water
4. Cook until the liver is done
5. Season to taste accordingly. Not too salty nor too bland.

Serve : 8-10 people

Recette de Menudo: spécialité Philippine


                                                Ingrédients :

1 kilo de porc d’echine, coupe en cubes
1 tasse foie de porc, coupe en cubes
2 cuillerées à soupe de huile
1 cuillerée à soupe d’ ail haché
1 oignon, finement haché
1 200g sauce tomate
1 feuille de laurier
 1 tasse de patates coupé en cubes et frite
                                               1 tasse de  l'eau
                                                1 tasse de carottes
                                                3 pcs. Hot dogs, coupés
                                                ¼ tasse de pois
                                               Sel et poivre


Comment faire :
1. faire sauter l’ ail, oignon et porc. Laissez mijoter jusqu'à la viande soit assez tendre. Ca va prendre au moins 20 minutes.
 2. Ajoutez la feuille de laurier,  sauce tomate et les carottes. Faire mijoter encore pendant  5 minutes
3. Ajoutez vos pommes de terre, foie de porc, morceaux de hot dog et 1 tasse de l'eau
4. Faites cuire jusqu'à ce que le foie soit tendre
5. Assaisonnez pour goûter. Pas trop salé ni trop doux.

Service : 8-10 personnes
